Hi Paul. The sausage may be packed too tight in the casing and you may be cooking the sausage too close to the flame. Make sure you oil the horn when making the sausage to make the casing come off easily. This way the sausage will come off when just full, not over filled. Use a lower temperature for grilling or move the sausage to the grill's cool spot. Most grills have a hot section and a cooler section. These 2 things should help
