I know I'm being specific, but I would like to make a sausage with Rosemary and Red Wine using beef and or buffalo....any suggestions on proportions of spices/wine. Haven't had much luck finding pork-free recipes using a variety of herbs and/or wines. I'm a rookie at making sausage but used to help my mom with her recipes. I'm ready to try some unique recipes on my own. Suggestions? Thanks
