If you want to start small, a pork roast will work fine as long as there is enough fat. I usually use a pork shoulder which after de-boned will give you about 15-16 pounds of meat, depending on the size of the shoulder. I like the amount of fat on a shoulder so I don't add any extra. About the hot sausage, sorry, I don't like them too hot
