I am looking for a recipe for sausage that my Hungarian Greatgranmother used to make. That does not mean that it would be Hungarian though as she made dishes and (sausages) that were perhaps traditional to other countries as well. What I remember of it is as follows, she would cook a pigs head untill the meat was coming off the bone and then add beef liver as well as cooked rice and garlic and possibley some other spices though am not certain about that part at all except of course for salt and fresh ground black pepper. These ingredients would be mixed together and then stuffed into pork casings. I think the name was Horka or Hourka though am doubtful that is correct spelling but the name does sound like that. Can anyone help me with this??
