10-lbs course ground pork butt
1/4-cup salt
1/2-cup chopped garlic
1/6-cup black pepper
1/6-cup red pepper
1/3-cup fennel seed
1/2-cup grated orange zest
3/4-cup shaved ice

Mix well
Put into casings
