Chaurice Sausage with Creole Sauce

2-lbs chaurice sausage links
3-tomatoes, chopped
1-large onion, chopped
1-clove garlic, minced
1-tsp salt
1-tsp freshly ground black pepper
1/2-tsp vegetable oil
1/2-cup boiling water


Heat the oil in a cast iron skillet
Lightly brown the onion
Add the tomatoes and garlic, stirring
Add the sausage, cover and simmer for about 5 minutes
Sprinkle with salt & pepper
Add the boiling water
Cover and simmer for 20 minutes
Great with eggs for breakfast!
