Cotechino Sausage
10-lbs ground pork
1-cup grated Romano cheese
4-cloves garlic, minced
4-tbsp salt
3-tbsp freshly ground black pepper
1-tbsp nutmeg
1-tbsp cinnamon
1-tbsp cayenne
1-tsp ground clove
2-cups ice water
Combine all ingredients, mix well & stuff into large hog casing or
beef rounds
