Garlic Game Sausage

8-lbs ground pork
8-lbs game meat (venison, moose, bear)
4-tbsp salt
2-tbsp black pepper
1 1/2-tbsp ground caraway
1 1/2-tbsp ground coriander
1 1/2-tbsp garlic powder
1 1/2-tbsp mace
1 1/2-quarts ice water
1-cup soy protein concentrate


To ground meat, add ice water then spices; mix well
Stuff into hog casings
