5-lbs ground pork
4-tsp salt
1-tsp ground white pepper
1-tbsp rubbed sage
1/2-tbsp ground ginger
1/2-tbsp ground nutmeg
1/2-tbsp thyme leaves
1/2-tbsp cayenne pepper
1-cup beer


Combine all ingredients, mix well & stuff into sheep casings, or make into patties
