2 1/2-lb ground pork
2 1/2-lb ground beef
2-tsp dried sage
4-tsp crushed red pepper
4-tsp cayenne
2-tsp hot paprika
2-tsp ground cumin
2-tsp dried sweet basil
2-tsp anise seed
2-tsp dried oregano
1 1/2-tbsp salt
1-tbsp freshly ground black pepper
1-cup cold water


Combine all ingredients, mix well & stuff into hog casing
