2-lbs pork butt
1-lb lean smoked bacon
1/2-cup beer or water
1-tbsp whole yellow mustard seeds
2-tsp minced garlic
2-tsp coarsely ground black pepper
2-tsp sweet Hungarian paprika
2-tsp dry mustard
1-tsp kosher salt
1-tsp ground coriander
1-tsp freshly grated nutmeg
1/2-tsp ground ginger


Combine all ingredients, mix well & stuff into hog casing.
