Italian Pepper Sausage

6-lbs coarse ground pork
4-tsp fennel
2-tbsp crushed red pepper, dry
1-clove garlic
1/4-tsp thyme
1-onion, finely chopped
1/2-tsp bay leaf, crushed
1 1/2-tbsp fresh ground black pepper
1/4-tsp coriander
2-tbsp salt
1-cup red wine
4-tbsp paprika


Combine all, mix well & stuff into hog casing
Cook as you would others
