Italian Sausage with Wine & Cheese

4-lbs ground pork
1-lbs lean ground beef
1-tbsp brown sugar
1 1/2-tsp cracked black peppercorns
5-tsp salt
2-tbsp fennel seeds
1-tbsp crushed red pepper flakes
1-cup cold red wine
3-tbsp grated Romano cheese


Mix all seasoning together with 1-cup cold wine
Mix seasonings with ground meat
Stuff into hog casings
