Jerk Pork Sausage

5-lbs ground pork shoulder
1-cup red wine
3-tbsp dried minced onion
3-tbsp thyme
11/2-tbsp garlic powder
11/2-tbsp cayenne
11/2-tbsp sugar
3-tsp allspice
3-tsp black pepper
1 1/2-tbsp salt
3/4-tsp cinnamon


Combine all ingredients, mix well & stuff into hog casing.
