7-lbs ground beef, fine grind
3-lbs ground pork, fine grind
10 cloves garlic, minced
4-tbsp salt
5-tbsp white pepper
4-tbsp sugar
2-tbsp paprika
1-tbsp mace
1/2-tbsp ground coriander
2-cups ice water
Combine all ingredients, mix well & stuff into hog casing
