10-lbs ground pork
10-cloves garlic, minced
2-tbsp crushed chili pepper flakes
3-tbsp salt
3-tbsp hot paprika
1-tbsp freshly ground black pepper
1-tbsp finely chopped fresh marjoram
3/4-cup ice water
1/2-cup cold wine vinegar or cider vinegar


Combine all, mix well & stuff into hog casing
