3-lbs ground pork
-cup Rustic Creole Seasoning
2-tbsp paprika
1-tbsp minced garlic
1 -tsp freshly ground black pepper
1-tsp salt
-tsp file powder
-tsp chili powder
-cup crushed red pepper flakes
-tsp ground cumin
2/3-cup red wine

Combine all ingredients, mix well & stuff into hog casing

 
Rustic Creole Seasoning

8-tbsp paprika
3-tbsp cayenne
5-tbsp ground black pepper
6-tbsp garlic powder
3-tbsp onion powder
6-tbsp salt
7-tsp dried oregano
7-tsp dried thyme
