Pappy's Louisiana Hot Sausage

20-lb ground pork
5-lb beef chuck
5-tbsp freshly ground black pepper
5-tbsp freshly ground white pepper
7-tbsp cayenne pepper
4-tbsp garlic powder
10-tbsp salt
10-tbsp hot Hungarian paprika
2-tbsp ground basil
5-tsp ground bay leaf
4-tbsp dry parsley flakes
6-tbs brown sugar
1-12oz bottle beer

Mix all dry ingredients with beer
Mix well into meat
Stuff in hog casing
