Rapini Sausage

10-lbs ground pork butt
1/4-cup salt
1/2-cup chopped fresh garlic
1/8-cup black pepper
4-bunches fresh rapini (broccoli rabe) cooked in salted water drained & chopped
3/4-cup dried sweet red bell peppers soaked in warm water then drained
3/4-cup shaved ice


Mix well
Put into cashing
I get the dry red bell peppers from Pittsburgh spice co. They are on line
