Sicilian Sausage

10-lbs ground pork
3-cups grated Romano cheese
2-cups cold red wine
2-cloves garlic, minced
3-tbsp salt
1-tbsp freshly ground black pepper
1 1/2-tsp nutmeg
1/2-tbsp ground coriander
1-tsp freshly grated lemon zest


Combine all ingredients, mix well & stuff into hog casing
