4-lbs ground pork, fine grind
4-lbs ground beef, fine grind
2-lbs fatty bacon ends
1-cup minced onion
10-cloves garlic, minced
4-tbsp salt
2-tbsp ground coriander
4-tsp brown sugar
2-tsp ground mace
2-cups ice water
Combine all ingredients in a food processor and process until it's a
very fine texture
Stuff into sheep casing
